Instructions
Marinate the tomatoes:
  1. Rinse, deseed and chop the tomatoes.
  2. Place the chopped tomatoes in a non-reactive container along with the olive oil, vinegar, reduction and spices. Season to taste with sea salt. Stir to combine. Allow the mixture to marinate for 30 minutes.
  3. Serve the marinated tomatoes on crackers with a drizzle of balsamic reduction on top, OR see the next step for bread toasting instructions.
If serving on bread:
  1. While the tomatoes are marinating, preheat the oven to 400°F.
  2. Slice a baguette crosswise. Place the pieces of bread in a single layer on a baking tray lined with parchment paper. Brush the tops of the slices with some olive oil. Toast them in the oven at 400°F for ~5 minutes, or until golden brown.
  3. Finally, spoon the marinated tomatoes on the toasted baguette slices and top with a drizzle of balsamic reduction. Enjoy!
