About Me

My name is Courtney Tyler. I am a blogger who resides in the Niagara region of Ontario, Canada. I created the Thankful Vegan food + lifestyle blog as a way to share what I have learned so far about eating a plant-based diet and living as a vegan.

I became a vegetarian on my 18th birthday. At that time, teaching myself to cook was my weekend hobby. I loved trying new ingredients and learning about food and nutrition.

I have been fully vegan since 2012. I do not consume any animal products or by-products, and veganism influences every decision that I make. Each day I strive to live in a way that reduces waste, pollution and suffering.

Before starting this site, I graduated with an Honours BSc in Biochemistry.

Finally, this blog is dedicated to my companion animal Ginny (2001-2017). We were best friends for 15.5 years. In the end, I lost her to congestive heart failure. She was always there for me. Through loving her, I realized there is no difference between a dog, a pig, a cow, a chicken, a fish and a bee. All animals deserve freedom and respect.

Fun Fact: The above photo of me was taken at the Havana Central restaurant in Times Square New York City. It captures a fun moment when I was served the best vegetable paella I have ever eaten!
